Garlic Shrimp with Pasta

Easy to make and always a big hit with my husband and family

Ingredients

  • 12 ounces angel hair pasta
  • 1 cup water
  • 1 package 16 oz frozen cauliflower and broccoli flowerettes thawed
  • 4 tablespoon olive oil
  • 2 tablespoon minced garlic
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon Salt
  • 1 pound fresh or frozen medium shrimp thaw; peeled, deveined
  • shredded parmesan cheese

Preparation

Cook the pasta according to package directions. Set aside.

Meanwhile, in a 12 inch skillet bring 1 cup of water to a boil. Add

cauliflower and broccoli. Cover and simmer 5 minutes until crisp-tender. Drain and set aside.

In same skillet heat 2 tablespoons of the oil over medium high heat. Add garlic, pepper and salt. Cook and stir for 1 minute. Add shrimp; cook and stir about 3 minutes more or until shrimp turn opaque. Stir in

cauliflower and broccoli; heat through.

Drain pasta; toss with remaining 2 tablespoons oil. Add shrimp mixture.

Sprinkle each serving with Parmesan cheese, if desired.
