Banana Crumb Muffins Ingredients

1 1/2 cups all purpose flour 1/3 cup Butter melted
1 teaspoon baking soda TOPPING
1 teaspoon baking powder 1/3 cup Brown sugar
1/2 teaspoon Salt 1 tablespoon all purpose flour
3 large ripe bananas mashed1/8 teaspoon ground cinnamon
3/4 cup Sugar 1 tablespoon Butter
1 whole egg lightly beaten

Instructions for Banana Crumb Muffins

In large bowl, combine dry ingredients. Combine bananas, sugar, egg and butter; mix well. Stir into dry ingredients, just until moistened. Fill greased or paper line muffin cups 3/4 full. Combine 1st three topping ingredients; cut in butter until crumbly. Sprinkle over muffins. Bake at 375F for 18-20 minutes or until test done. Cool in pan 10 minutes before removing.

Excellent use of overripe bananas. Great crunchy topping and easy. Might put a dash of vanilla next time.
