Foil Pack Chicken and Dressing Dinner

My family told me to remember this dinner. They loved it.

Ingredients

  • 2 packages (6 oz) Stove Top Stuffing Mix for Chicken
  • 3 1/4 cups water divided
  • 6 boneless skinless chicken breasts 1/2 inch thick
  • 6 thin sliced smoked ham or dried chipped beef
  • 1 cup sliced mushrooms canned; or Fresh
  • 1 cup peas canned; or Frozen
  • 1 can (10 3/4 oz) cream of mushroom soup; or cream of chicken
  • 1 cup matchstick cut carrots optional

Preparation

Preheat oven to 400 degrees.

Tear off 6 separate sheets of heavy-duty aluminum foil and place 1 chicken breast in the center of each.

Mix stuffing with 3 cups of the water. Dividing evenly, place stuffing on top of the chicken.

Layer ham, mushrooms, peas and carrots on top of stuffing, dividing evenly between each of the 6 foil packs.

Mix soup with the remaining 1/4 cup of water; pour equal amounts over each pack.

Bring up foil sides. Double fold top and ends to seal pack, leaving room for heat circulation inside.

Complete all 6 foil packs and place on 15 x 10 x 1 inch baking pan. Bake 45 mins if chicken has been thawed first.

Bake 1 hour if chicken is frozen.

Remove packets from oven. Let stand 5 minutes.

Place packs directly on dinner plate. Since packs are hot, cut slits into foil using a knife to release steam before opening.

I would greatly reduce the amount of stovetop stuffing as it overpowered the flavor of any other ingredients in the packet.

This was pretty good, not as good as I expected from the reviews. Next time I will probibly leave the veggies out and serve them as a side dish. The peas especially got over done. Maybe will use cream of chicken soup instead

I'd been meaning to try this for some time and every time I went to make it, we had a last minute invitation or surprise, "we had no cream of..." soup. Tonight was finally the night to give it a go. I really enjoyed it, as did my family and although it is already quite quick to make, I think I could safely make up a few of these to freeze for the nights I just couldn't be bothered!
