Pork Chops Cacciatore (9 Pts) Ingredients

4 boneless pork chops about 1 pound 1/4 cup thinly sliced celery
2 tablespoon seasoned dry breadcrumbs 2 tablespoon dry white wine or vermouth
Olive oil cooking spray 1 can diced tomatoes undrained
2 teaspoons olive oil 2 cloves garlic crushed
1 medium onion cut in half and then thinly sliced 1/2 teaspoon dried oregano
3 cups mushrooms sliced Salt and pepper to taste

Instructions for Pork Chops Cacciatore (9 Pts)

Lightly coat chops with bread crumbs. In a large nonstick skillet coatedwith cooking spray, heat oil over medium-high heat. Add chops and brown onboth sides, about 6 minutes. Remove to a plate. Add onion, celery,mushrooms and wine to skillet. Cook, stirring occasionally, until onionand celery is softened, about 4 minutes. Add tomatoes, garlic, oregano,salt and pepper; stir to combine, scraping any browned bits of the bottomof the skillet. Return chops along with any juices to the pan, coveringthem with some of the tomato mixture. Cover skillet and bring to a boil;reduce heat and simmer until pork is tender, about 20 minutes.
