Potato Ratatouille Ingredients

1/4 cup Butter 1 cup Tomato (1 medium) 1/2" pieces
6 new red potatoes quartered1 teaspoon dried basil leaves
1/2 teaspoon Garlic finely chopped1/2 teaspoon Salt
2 cups Eggplant (1 small) 1/2" pieces1/2 teaspoon Pepper coarsely ground
2 cups Zucchini (2 medium) 1/4" slices

Instructions for Potato Ratatouille

In 10-inch skillet melt butter until sizzling; add potatoes and garlic. Cover; cook over medium high heat, stirring occasionally, until potatoes are browned and fork tender (12 to 15 minutes). Reduce heat to medium; add all remaining ingredients. Cook, stirring occasionally, until vegetables are crisply tender (6 to 8 minutes).
