Crunchy Toasted Granola Ingredients
1 package (6oz) Dried
apricot
s cut into 1/4-inch pieces
1/2 cup Slivered
almond
s
1/2 cup Dried
cranberries
(sweetened)
1/2 cup Un
salt
ed sunflower seeds
2 tablespoons Light
brown sugar
1/2 cup Roasted soy nuts
1 cup Hot water
2 tablespoon Nonfat dry
milk
powder
1 teaspoon
Vanilla
extract
1 teaspoon Ground
cinnamon
3 cups Rolled
oats
(not quick cooking)
Instructions for Crunchy Toasted Granola
Preheat oven to 250F.
In a medium bowl, combine apricots, cranberries and sugar. Add hot water and vanilla and let stand for 15 minutes.
Meanwhile, combine remaining ingredients in a large bowl. Add apricot mixture and liquid to dry ingredients and mix well. Transfer mixture to a shallow roasting pan. Bake 1 hour and 30 minutes, stirring every 15 minutes, until oats are golden and crisp.
