Italian Chicken Stew Ingredients

3 pound Chicken 1 can (15 oz) Garbanzo beans drained
2 tablespoon Olive oil 1 1/4 cups Chicken broth
2 medium Green pepper sliced2 teaspoon Dried Italian seasoning crushed
2 medium Onion wedged1/2 teaspoon Black pepper
1 can (28 oz) Tomato crushed

Instructions for Italian Chicken Stew

1. Cook chicken, half at a time, in hot oil in 4qt. dutch oven, turning to brown evenly. Remove chicken. Cook green peppers and onions until tender in same pan. Return chicken to pan.

2. Combine undrained tomatoes, garbanzo beans, broth, Italian seasoning and black pepper. Pour over chicken mixture.

3. Bring to boil; reduce heat. Simmer, covered about 30 minutes or until chicken is done. Remove chicken from bone, if desired, and return to stew. Garnish with fresh oregano, if desired.

I made this in the crockpot much like a traditional stew (I had to work). I cannot eat peppers so I put in carrots and I had some boneless turkey breast chunks that I used and I didn't have garbanzos so I used pintos. This cooked up wonderfully and my family raved and raved how great it was!
