Cranberry-Nut Pilaf Ingredients

2 teaspoons Olive oil 1 1/2 cups Fat-free chicken broth
1 clove Garlic minced1/2 cup Dried cranberries, sweetened
1/4 cup Cashews chopped1/2 teaspoon Salt
2 cups Instant brown rice, uncooked 1/4 teaspoon Black pepper
1 teaspoon Ground cumin 1/4 cup Fresh parsley chopped

Instructions for Cranberry-Nut Pilaf

1. Heat olive oil in a medium saucepan over medium heat. Add minced garlic and cook 1 minute. Add chopped cashews and cook another minute. Add instant brown rice and cumin and cook 1 minute more, until cumin gives off a fragrant scent.
2. Add broth, cranberries, salt and pepper and bring to a boil. Reduce heat to low, cover and simmer 5 minutes. Remove pan from heat and let stand 5 minutes, until liquid is absorbed. Stir in chopped parsley and fluff with a fork. Serve immediately.
