Spicy Bulgur Burgers with Cucumber and Feta Salad Ingredients
2 1/2 cups
Chicken stock
3 tablespoons Fresh
oregano
chopped
2 cups Medium-grind bulgur
2 tablespoons Toasted
pine nut

Feta
cheese crumbled
1 pound Extra-lean
ground beef
2 tablespoons
Lemon
juice
3 Green
onion
s chopped fine
1 tablespoon
Olive oil
2 teaspoons Groun
cumin
Salt
to taste
1/2 teaspoon
Cayenne
Pepper
to taste
2 cloves
Garlic
minced
4 Whole-wheat
ham
burger buns
1 medium
Cucumber
peeled, seeded and chopped into 1/4-inch pieces
Instructions for Spicy Bulgur Burgers with Cucumber and Feta Salad
1. In a medium saucepan over medium-high heat, bring to chicken stock to a simmer. Add the bulgar and 1 teaspoon of salt. Cover and turn off heat. Let stand 10 minutes. Fluff bulgur with a fork. Cover and let sit another 5 minutes. Transfer to a large, shallow bowl and allow to cool.
2. In another medium bowl, place 1 cup of the cooked bulgar. Add ground beef, half the green onions, cumin, cayenne and garlic. Mix with your hands so ingredients are well incorporated. Form into 4 patties. Grill, broil or cook patties in nonstick frying pan, about 5 minutes per side until done.
3. Meanwhile prepare the bulgur salad by adding the remaining onions, cucumber, oregano, pine nuts, feta, lemon juice and olive oil to the remaining bulgur. Season to taste with salt and pepper.
4. Serve burgers on whole-wheat buns with your favorite fixings, along with 1/2 cup of the bulgur salad. (There will be leftover salad.)
