Vera Cruz Sauce Ingredients

1 teaspoon Olive oil 1 ea Bay leaf
1 cup Onions sliced pinch Cayenne or red chili flakes
1 teaspoon Garlic minced1/4 cup Cilantro fresh minced
1/2 cup Celery diced1/2 cup Tomato diced with juice
1/2 cup Green bell pepper sliced1/3 cup Ripe olives sliced
1/2 cup Red bell pepper sliced1 1/2 cup Chicken stock
1/2 teaspoon Jalapeno peppers or serrano pepper diced Salt to taste
1/4 teaspoon Thyme Pepper to taste

Instructions for Vera Cruz Sauce

Heat olive oil in a sauce pan over medium heat. Add onions, garlic, celery, and peppers, saute for 3 - 4 minutes. Add thyme, bay leaf, red chili flakes, cilantro, tomatoes and olives. Continue to saute for 3 minutes. Add chicken stock and bring to a simmer. Reduce heat and simmer over low heat for 20 - 25 minutes, stirring occasionally, Season with salt and pepper.
