Dad's "Wakeup Makeup" Breakfast Casserole

A quick - "throw together" breakfast casserole that will please your hungry "crew".

Ingredients

  • 1 tablespoon butter or margarine
  • 2 baked potatos leftovers or bake in microwave
  • 1 cup refried beans canned or leftovers
  • 1 cup medium picante salsa
  • 6 eggs
  • 1/4 cup milk
  • Salt & pepper to taste
  • 1 cup shredded cheese
  • cheddar monterrey jack or mixed
  • 12 fresh flour tortillas

Preparation

Preheat oven to 375F. Grease the bottom of a 9X12 baking dish with the butter.

Slice the potatos diagonally in 1/4 - 1/2 inch slices. Leave skins on. Place a layer on the botton of the dish.

Cover the potatos w/ a layer of refried beans. Top that with the rest of the potatos. Spread about 1/2 the salsa over the layers followed by 1/2 of the cheese.

Crack the eggs into a bowl, add the milk, and mix them with a whisk or fork. Add salt & pepper then pour eggs into the baking dish.

Top the layers with the remaining cheese. Cover dish w/ foil and bake about 45 mins. At about 30 mins you can remove the foil to allow the top to brown. When a knife comes out clean it's ready.

Put the remaining salsa (warmed) on top as garnish.

Serve with warmed flour tortillas. You may want a spicier salsa on the side for the "pepper bellies" in the group.

This was a very good recipe. Next time, would change it up a bit to make it more of a breakfast burrito. This really reminded me of a McDonalds breakfast burrito, which is good, because I think they're awesome. Will add onions, peppers, a breakfast meat and probably more eggs in next time.

I went about this all backwards - I planned for it. Nothing was a leftover. I actually had to shop to make it. I used my homemade pico de gallo salsa (fresh) and because I had to bake the potatoes in the morning (not thinking ahead) - they turned out more like mash. But who cares! This was great! Even my husband (a strict English breakfast only cat) said it looked great. Yum yum and will make again!

The name is a family story. On Christmas Eve, 2002, Daughter mentioned to Dad at 2:00 AM that she needed to take breakfast to the theatre in the morning for "the crew". At 7:00 AM Dad wokeup, looked through Daughter's kitchen to see what was on hand, and made up this recipe. Thus the name "Wakeup - Makeup".
