Portuguese Barbequed Chicken

Easy - basically the trick is finding nice Portuguese chicken seasoning!

Ingredients

  • 1/4 cup Olive oil
  • 2 cloves Garlic crushed
  • 1 teaspoon Portuguese chicken seasoning (cajun will work in a pinch)
  • 2 tablespoon Lemon juice
  • 8 medium Chicken drumsticks

-- Yogurt Lemon Dipping Sauce --

  • 1 cup Plain unsweetened yoghurt
  • 1 tablespoon Lemon Juice
  • 1 small Cucumber diced
  • 1 tablespoon Fresh mint leaves finely chopped

Preparation

Combine olive oil, garlic, seasoning and lemon juice in a large shallow dish.

Cut slits into each chicken drumstick and brush marinade over chicken. Leave to marinate for 20 minutes (at least).

Cook the chicken on a barbeque or chargrill for 30 minutes until cooked, turning from time to time.

YOGHURT LEMON DIPPING SAUCE

Combine yoghurt, cucumber, lemon juice and mint in a bowl.
