Saute onion, mushrooms, and garlic until onion is wilted but not browned. Add Ground beef and half the oregano and salt and cook, stirring and breaking it up until all is well browned and cooked through. Add tomatoes, tomato paste, water, and remaining seasonings. Simmer at least 15 minutes or leave on low heat with a simmer ring for hours (stirring occasionally). You can also put the sauce in a slow cooker after it has come to a boil.
