Holiday Cranberry Relish

100% would make this recipe for Holiday Cranberry Relish again.

This is the prized recipe of a coworker of my husband. It took some convincing, but she finally parted with the recipe. Husband adores this relish during the holidays.

Holiday Cranberry Relish Ingredients

1 package fresh cranberries 1/3 cup grated orange peel (1-2 oranges)
1 cup sugar 1 cinnamon stick
1 cup water 3 oz. brandy optional
1/2 small pkg Cherry jello 1 oz. sweet vermouth optional
1 -20 oz. can crushed pineapple drained

Instructions for Holiday Cranberry Relish

Combine cranberries, sugar and water. Bring to a boil; reduce heat and cook for 10 minutes. Cool. You can also cook cranberries in Microwave-safe bowl if you prefer. Cool berries before adding other ingredients.

Add remaining ingredients. Chill overnight.

You can substitute an orange flavored liqueur such as grand marnier or triple sec. You can also substitute with 1/2 cup orange juice if you don't want to use liquor. I prefer it without liquor myself, although it's delicious both ways.

It really tastes better if you make this a couple of days ahead of time.

I usually double the recipe, since my husband seems to enjoy this so much. It doesn't last long.
