Meatless Minestrone Ingredients

1 medium onion chopped2 cloves garlic minced
3/4 cup sliced celery 1 tablespoon dried basil
2 medium carrots sliced 2 1/4 teaspoons dried oregano
3 Tablespoons Butter 2 teaspoons fresh or dried parsley flakes
2 cans (14 1/2 ounce stewed tomatoes1/2 teaspoon pepper
2 cans (14 1/2 ounce chicken broth1 pinch cayenne pepper
2 cups water 1 can (16 oz) kidney beans, rinsed and drained
4 cups shredded cabbage 1/2 cup cooked rice
1 medium potato peeled and diced

Instructions for Meatless Minestrone

In a Dutch oven or soup kettle, saute onion, celery and carrots in butter until vegetables are tender.

Add tomatoes, broth, water, cabbage, potato and seasonings; bring to a boil.

Reduce heat; cover and simmer for 1 hour. Stir in beans and rice; heat through.
