Cheese and Bran Muffins Ingredients

2 1/2 cups whole-wheat flour 3 whole eggs
1/2 cup Bran flakes 1 cup buttermilk
1 tsp baking powder 2 medium onions chopped and sauted in olive oil
1 tsp salt 1/2 cup Parmesan cheese grated
1 tsp freshly ground black pepper 1 cup cottage cheese
1 tsp finely chopped fresh rosemary 1 tbsp chopped fresh basil
200 g unsalted butter

Instructions for Cheese and Bran Muffins

1.- Preheat Oven to 180 degrees C and grease 12 muffin cups or use muffin papers.
2.- Mix all the dry ingredients into a large bowl.
3.- Add softened butter by hand until you have a bread-crumb consistency.
4.- In a separate bowl whisk eggs, buttermilk and herbs before folding the cheeses and cooled sauted onions.
5.- Fold this wet mixture into the dry ingredients.
6.- Spoon this mix into muffin cups and bake for 35 - 40 minutes or until a toothpick comes out clean.
7.- Cool on wire rack and serve them warm.
