Spinach and Cheese Squares Ingredients

1/2 cup egg substitute 1/2 teaspoon fresh ground black pepper
6 tablespoons whole-wheat flour 1/8 teaspoon cayenne pepper
10 ounces chopped spinach thawed (frozen)1 pinch nutmeg
2 cups cottage cheese low-fat3 tablespoons wheat germ
2 cups Cheddar cheese reduced-fat

Instructions for Spinach and Cheese Squares

1 In a large bowl beat the eggs with the flour until the mixture is smooth.

2 Add the spinach, cheeses, cayenne and nutmeg, and mix the ingredients well. Pour mixture into a nonstick coated 13x9x2 -inch baking pan.

3 Sprinkle the top with wheat germ and bake at 350 degrees F. for about 45 minutes.

4 Let stand for about 10 minutes and then cut into 1-1/2-inch squares for serving.
