Diana's Fritatta Ingredients

3 large potatos finely sliced 1 tablespoon paprika
1 large zuccini finely sliced 1 teaspoon salt
1 tablespoon olive oil pepper to taste
1 clove garlic finely chopped 1/2 cup Cottage cheese
1 large onion finely chopped 1/2 cup Parmesan cheese
1 red pepper chopped 2 teaspoons fresh basil chopped
2 tablespoon tomato pure 1 sheet puff pastry
4 eggs lightly beaten

Instructions for Diana's Fritatta

1.- Preheat oven to 200 Deg C and line a baking dish of 11 in x 7 in x 1.5 in with baking paper.
2,- Cook the potatos in a saucepan with water to cover them, just until tender.
3.- Saute the onion and the garlic in frying pan and add the red pepper and cook until soft, then add the zuccini, the drained potatos and basil and cook for another three minutes.
3.- In a separate bowl combine the eggs lightly beaten, the paprika, tomato pure, cheeses, salt and pepper and whisk all, then add the potato mixture and toss everything until well covered with the egg.
4.- Spread the egg mixture into baking dish. Cut the sheet of puff pastry to fit the baking dish and place it on top of the egg mixture. Brush the pastry with a beaten egg.
5.- Bake for 30 minutes, let it cool for 10 minutes and cut into slices or squares.

I maybe have done something wrong, but it just didn't take good to anyone in my family. It sounded delicious in theory!

Everyone liked this fritatta. I did not have cottage cheese so I substituted low fat natural yogurt and added some bacon when frying the onion and garlic. Will make this again
