Blackened Chicken Penne Ingredients

4 6oz Chicken breast 1/4 cup Parmesan shredded
1 pound Penne pasta cooked5 tbs Paprika
1 cup Chicken stock 1 tbs Cayenne
1/2 cup White wine 1 tbs Onion powder
2 cups mushrooms sliced1 tbs Garlic powder
2 cups Tomatoes diced2 teaspoons Salt
1 cup Red onion sliced1 teaspoon White pepper ground
2 tbs Garlic minced1 teaspoon Thyme dried/crushed
1/2 cup Cajun Blackening Spice 1 teaspoon Oregano dried/crushed
3 tbs Olive oil

Instructions for Blackened Chicken Penne

Combine last 8 ingredients to create the "cajun blackening spice" mentioned earlier in ingredient list.
Season chicken breasts with cajun blackening spice (but save 2 tbs. of spice for sauce), grill seasoned breast while preparing pasta.In large skillet, saute red onion, mushrooms and garlic until tender. Add chicken stock, white wine and 2 tbs. blackening spice. Bring to a boil, add cooked penne noodles, diced tomatoes, toss and cook until thickened. Arrange pasta on serving dish, top with grilled chicken breast. Garnish with fresh shredded parmesan cheese.

Geat dinner. I didn't have penne pasta so I used Rotini but that has no effect on the flavour. I cut the cayenne pepper in half, the spice seem to be bothering my wife lately. I'll definitely be making this one again.
