100% would make this recipe for Penne with Creamy Tomato Tuna Sauce again.

This is my absolute favourite pasta dish and it's very easy if you make the tomato sauce ahead of time. Don't substitute for the homemade tomato sauce; it's not nearly as good with canned.

Penne with Creamy Tomato Tuna Sauce Ingredients

6 ounces Whole wheat penne -- TOMATO SAUCE --
1 tablespoon Olive oil 1 medium Onion finely chopped
1 clove Garlic 1 clove Garlic finely chopped
5 large Sun-dried tomatoes chopped4 tablespoons Extra virgin olive oil
7 large Oil-cured black olives pitted1 28 oz can Crushed tomatoes
1 85g tin Tuna drained1/4 teaspoon Dried chiles crushed
1/4 cup 5% cream 5 leaves Fresh basil torn
1 cup Homemade tomato sauce Salt to taste

Instructions for Penne with Creamy Tomato Tuna Sauce

TOMATO SAUCE
This makes approximately 3 cups. I make it ahead and freeze it in 1 cup quantities perfect for this recipe.

Heat olive oil over medium heat. Add onion garlic and chiles and saute gently until onion is soft. Add tomatoes and simmer on low for about 10 minutes. Add salt and basil leaves and stir to combine.

PASTA
Cook penne according to package instructions for al dente.

Heat oil over medium heat and add garlic, sun-dried tomatoes and olives. Cook until garlic is golden. Add tomato sauce, mix to blend well and heat through. Break tuna into chunks and add to sauce. Cook for about one minute more. Keep sauce warm.

When penne is just about done, add cream to sauce and stir until it is well absorbed. Don't allow the sauce to boil at this point. Drain penne and add to sauce mixing well. Sprinkle with chopped fresh parsley before serving, if desired.
