Shrimp Jambalaya Ingredients

1 cup Ham - fully cooked; cubed 1/2 teaspoon Salt
3/4 cup Onion chopped 1/4 teaspoon Dried thyme
1 clove Garlic minced 1/8 teaspoon Cayenne pepper
2 tblspoons Vegetable oil 1/8 teaspoon Chili powder
2 cups Chicken broth 1 cup Long grain rice uncooked
1 can (14.5 oz) Tomatoes stewed 1 pound Shrimp uncooked, medium, peeled and deveined
2 tblspoons Fresh parsley minced

Instructions for Shrimp Jambalaya

In a large skillet, cook the ham, onion and garlic in oil until onion is tender. Stir in broth, tomatoes, parsley and seasonings. Bring to a boil. Stir in rice. Reduce heat; cover and simmer for 15 - 20 minutes or unitl rice is tender. Add shrimp; cook 5 minutes longer or until shrimp turn pink.

I keep diced ham pre-packaged in the freezer so this dish is very quick and easy to throw together. The flavor is outstanding. I have used white and brown rice and they both turn out great. [I posted this recipe.]
