Witherage Lane Smokies Ingredients

500 ml double cream cream 750 g tomatoes skinned, seeded and chopped
250 grams smoked white fish 50 g parmesan cheese grated
1 pinch salt & pepper to taste

Instructions for Witherage Lane Smokies

Butter 6 ramekins, pour in half the cream divided equally in the ramekins. Add the flaked fish and season well. Spread the chopped tomatoes in a layer on top of the fish and cover each of the ramekins with the rest of the cream. Sprinkle over the grated cheese and bake at 350F for 20 - 30 minutes. Finally brown the top under a hot grill.
