Lemon-Garlic Chicken Ingredients

4 Chicken leg quarters - skin & fat removed1 tablespoon Soy sauce - low sodium is fine
1 tablespoon Olive oil 1/4 teaspoon Kosher Salt
1 large Lemon - Zested & juiced1/2 teaspoon Black pepper - fresh ground
4 cloves Garlic - crushed

Instructions for Lemon-Garlic Chicken

Preheat oven to 350F.

Disjoint drumsticks from thighs. Place oil in pan and saute' chicken until browned.
Place a sheet of foil in a backing tray. Place chicken in center and season with salt & pepper.

In a separate bowl mix lemon juice, zest, garlic, and soy sauce. Pour this evenly over the ckicken and wrap up the foil to make a sealed package.

Bake the package for 1 hour at 350. Open at table and serve with rice or other side-dish.
