Loaded Potato Soup Ingredients

1 1/2 cups Heavy cream 4 strips Bacon cooked, crumbled
6 medium Potatoes diced1 cup Colby jack cheese shredded
1/2 large Onion minced4 Green onions for garnish
2 1/2 stalks Celery minced4 tablespoons Bacon bits for garnish
2 can (14 oz) Chicken broth 1/2 cup Colby jack cheese for garnish

Instructions for Loaded Potato Soup

Put potatoes, onion, celery , bacon and chicken broth in dutch oven. Bring to boil. Reduce heat, cover and simmer for 1 1/2 hours or until potatoes are done and soup begins to thicken. Add the 1 cup cheese and the heavy whipping cream. Heat until cheese is melted and soup is hot. Chop the green onions. Spoon into bowls. Garnish with the bacon bits, chopped green onions, and additional cheese.
This serves 2 as an entree or 4 as an appetizer.
