Daikon and Carrot Salad Ingredients

200 g carrots julienned3 tablespoons rice vinegar
250 g daikon radishes julienned2 teaspoons sugar
1 Green onion chopped2 teaspoons peanut oil
DRESSING1 teaspoon sesame oil
1 tablespoon mirin

Instructions for Daikon and Carrot Salad

Put vinegar, mirin, and sugar together in a small bowl and stir until sugar dissolves. Add peanut and sesame oils and blend well.

Place carrots and daikon in a colander and sprinkle with salt. Let stand for 15 minutes or until limp. Transfer to a bowl and toss with chopped green onion and dressing. Taste for salt and add more if needed.

Marinate for at least 10 minutes and serve chilled.
