Flax - Bran Muffins Ingredients

1 1/2 cups Flour, Whole Wheat Pastry 1/2 cups Carrots - finely shredded
3/4 cup Flaxseed Meal 2 large Apples, Granny Smith - peeled and shredded
3/4 cup Oat Bran Cereal 1/2 cup Raisins (optional)
1/2 cup Brown sugar ( Brown Sugar)1 cup Nuts, mixed (no peanuts) - chopped
1/4 cup Splenda 3/4 cup Milk
2 teaspoon Baking Soda 2 large Eggs - beaten
1 teaspoon Baking Powder 1 teaspoon Vanilla extract as required
1/2 teaspoon Kosher Salt 1 teaspoon Blackstrap Molasses - optional (improves flavor)
2 teaspoon Cinnamon

Instructions for Flax - Bran Muffins

Pre-heat oven to 350F

Mix together flour, flaxseed meal, oat bran, brown sugar, baking soda, baking powder, salt and cinnamon in a large bowl.

Stir in a separate bowl carrots, apples, raisins (if desired) and nuts. Combine milk, beaten eggs, molasses, and vanilla with other moist ingredients. Pour liquid ingredients into dry ingredients. Stir until ingredients are moistened. DO NOT OVER MIX.

Fill muffin cups 3/4 full.

Bake at 350F for 15-20 minutes.
