Instructions for Rouladen Blue Plate Special
Place cube steaks on a flat surface and flatten with the heel of the hand.Spread the cube steaks with 1 tablespoon mustard each. On one end of eachsteak, place a half strip of bacon, a pickle wedge, slices of onion(divide slices between the four steaks) and 1/2 tablespoon of bread crumbs.Roll up beginning at the end of the steak with the pickle, bacon andonion. Fasten the rolls with a toothpick. In a large frypan, brown the steak rolls on all sides. I use a nonstickfrypan and don't need to use any oil, however, with regular cookware, itmay be necessary to use enough oil to keep the meat from sticking. Whenthe rolls are browned all all sides, add the vegetables and 1/2 cup eachwater and pickle juice. Add salt and pepper to taste. Bring to a boil andreduce heat to a simmer. Cover pan and cook until the potatoes and carrotsare soft, about 45 minutes to one hour.Mix the remaining 1/2 cup of water and the flour. Uncover the pan andblend and stir in the flour-water until gravy is thickened. Stir so that the gravy covers the vegetables. Serve
