Sunshine Lemon Coolers

Ingredients


Preparation

1. Preheat oven to 325 degrees.

2. Cream together sugars, shortening, egg, vanilla, and salt in

a large bowl.

3. Add the flour and baking powder. Add 1 tablespoon of water and

continue mixing until dough forms a ball.

4. Roll dough into 3/4-inch balls and flatten slightly onto a

lightly greased cookie sheet. Bake for 15 to 18 minutes or until

cookies are light brown.

5. As cookies bake, combine 1 cup powdered sugar with the lemonade

drink mix in a large plastic bag and shake thoroughly to mix.

6. When the cookies are removed from the oven and while they are

hot, add 4 or 5 at a time to the bag and shake it until the cookies

are well coated. Repeat with the remaining cookies.

These "copycat" lemon cookies turned out surprisingly good considering their made with a Kool-Aid style lemonade drink mix. Next time I may add some of the lemonade powder to the cookie dough and add a bit more to the powdered sugar to make them even more lemony.

This has become my "go to" recipe for bringing something sweet to an event. Easy and elegant, they taste wonderful. The recipe provides enough dough for at least a couple dozen cookies depending on how little you make them. The cookies are yummy even without the lemony powdered sugar.

I tried this recipe twice. First time, I substituted fresh lemon juice for water. Just made sense, right? They tasted terrible. The vanilla extract and the lemon juice clashed. It was like your taste buds wanted you to go in two different directions. Second time, I stuck with water and they were fabulous. May try a third time, using lemon extract instead of vanilla extract?

I had never had these before, but a co-worker was reminiscing about them, so I took on the challenge of making them for him. He said these were extremely close to the originals!

I don't know about this reciepe but like the person below said, Niche makes "Lemon Cookies" and believe me when I say they taste just like Lemon Coolers. I love Lemon Coolers and was sooo upset when they stopped making them and then 2 weeks ago I was shopping at the Vons in Murrieta and happened to pass by a display and on the top was a box of Lemon Cookies by Niche. I thought well they look like Lemon Coolers but doubted that they taste as good. So I bought them anyway, OH MY GOSH!!! I ate over half the box before I got home and then polished off the rest the next day. The only problem is I can't find them again. I have been to 2 other Vons and they don't seem to be there.

AMAZINGLY close to the original lemon coolers. Slightly different texture but I may need to bake them longer or shorter. Will try again soon. Absolutely fabulous either way! Only change I made is adding a little extra lemonade mix since I like a stronger lemony flavor.

Yummy! Next time (and I WILL make these again!) I will increase the lemonade powder and I like the suggestion of using lemon juice instead of water. Used all-purpose flour with conversion I found on line and it worked well. Enjoy!

I added 1/8 tsp of lemon extract to make the cookies more lemony, and I upped the lemon powder to 3-4 tbsp since I like tangy stuff. I may omit the vanilla extract next time since I don't think it adds much to this recipe. The cookies came out really good, now I know how to satisfy my lemon craving. Next I will try making a lime version. You can find lemon and lime powder online, I got mine on ebay.

For anyone who has made this recipe, do these really measure up to the classic lemon coolers we used to be able to buy? (In the green box; don't remember if the brand was Sunshine or not). We've looked everywhere and they are not sold anywhere.

This is excellent!!!! I have been searching for SO LONG to try and find a knockoff recipe for the Girl Scout Lemon Coolers!!!!! I fell in love with them two years ago, and then I was SO disappointed when I found out they were discontinued!! But then I found this recipe, and I would wholeheartedly recommend it to anyone who loved those cookies! I did add about a quarter teaspoon of lemonade mix to the actual cookie dough, to give the whole thing a zesty lemon taste, and I used regular flour because I didn't have any cake flour, and it turned out fine! Also, I cut the cookies in half so they would look more like the Girl Scout Lemon Coolers :) I LOVE THEM and I will definitely be making them again!!

This is absolutely wonderful. My daughter who is now 19 had been begging me to get her some of these cookies and was so disappointed that they were no longer marketed. She ate these all the time when she was little. I tried this recipe and we were ALL so pleased with the results!!
