Uses left over meat and is what my Chinese neighbor's father made at his restaurant! Can't get much more authentic than that!
Place oil in very large hot skillet, add salt, pepper, gourmet powder and onions. Stir 3 mins then push mixture to one side and and fry eggs until firm. Add rice, bean sprouts, scallions and meat. Mix well and keep stirring for 4 mins. Add soy sauce, mix well and serve.
We live in an area with little fresh food and use green onions instead of scallions. I also sometimes add peas or snow pea pods cut into bite sizes. A tough of garlic with the onions at the begining is also good. My neighbor told me that her father would use all kinds of left-over meats and vary the vegetables.
