Potato Corn Chowder

An easy, satisfying chowder that is "lip-smacking" good.

Ingredients

  • 1 -1/2 cups - diced cooked ham
  • 1 - cup - diced celery
  • 1/2 - cup chopped onion
  • 1 - T. butter or marg.
  • 1 - can (13-3/4 oz.) condensed Cheddar cheese coup
  • 1 -1/2 -cups milk
  • 1 - can (14-1/2 oz.) Del Monte diced potatoes, drained
  • 1 - can (14-3/4 oz. ) Del Monte Cream Style Golden Sweet corn

Preparation

Cook ham, celery and onion in butter in large saucepan until vegetables are tender.

Add cheese soup, milk, potatoes and corn. Simmer 5 min. over low heat until heated through, stirring occasionally.

NOTE: I had leftover Christmas ham that I used.

Also used leftover cheesy potato casseole for the potatoes and some leftover fresh creamed corn. I also cooked the celery and onion in the microwave instead of the stovetop. So, as you can see, this is a versitile recipe. Go ahead.....experiment and enjoy.
