Alan Bole's Ginger-Lime Dipping Sauce Ingredients

1 teaspoon Garlic chopped1/4 cup Fish Sauce
1 each Serrano chiles chopped2 tablespoons Lime Juice freshly squeezed
3 tablespoons Sugar 3 tablespoons Water
3 tablespoons Ginger minced, fresh

Instructions for Alan Bole's Ginger-Lime Dipping Sauce

Put garlic, chilies, sugar and ginger in a mortar and pound into a paste.
Transfer to a small bowl and add fish sauce, lime juice and water. Stir
well to combine. Set aside for 15 minutes before serving.

Keeps several weeks in the fridge, but you lose the sharpness of the
ginger overnight.
