Preparation

Pecans can be toasted and chopped up to 1 week ahead. Prepare Potatoes 2 days ahead. Refrigerate covered.

Heat oven to 400'F.

Prick each sweet potato with a fork and bake on a rimmed sheet for 45 minutes until soft.

When cool enough to handle, cut potatoes into lenghwise halves.

Scoop out the insides and put them in a medium bowl.

Mash with the next 4 ingredients. Spoon back into skins.

On a non-stick surface baking sheet, place the potatoes and sprinkle with bacon and pecans.

Bake at 350' until hot.
