Lemon Bars Ingredients

1 1/2 cup Flour 1 teaspoon Lemon Zest
1 cup Margarine melted2 teaspoon Baking powder
3/4 cup Powdered sugar 4 tblspoons Flour
3 ea Eggs, large 1 cup Sugar
1 cup Lemon Juice Powdered sugar for garnish

Instructions for Lemon Bars

Blend the first 3 ingredients in a mixing bowl till fine. Press into an ungreased 13X9X2 pan. Bake in a 300F preheated oven for 15 minutes or until crust starts to turn brown. Take out and set aside.
Mix the next 6 ingredients in a small mixing bowl and pour over the cooked crust. Return to oven and bake for an additional 25 minutes at 350F.
Take out and sprinkle with powdered sugar.

You can adjust the amount of lemon juice to taste. Keri likes to use only fresh lemons although reconstituted lemon juice is ok. [I posted this recipe.]
