1 bag Wild Red
Lettuce
Mix
2 tablespoon
Red Wine Vinegar
2 heads Bibb
Lettuce
2 tablespoon
Honey

Pear
s peeled and chopped
1 tablespoon
Dijon mustard
1/2 cup
Blue Cheese
crumbled
1 tablespoon Water
1/2 cup
Pine nut
s toasted
1 Shallot or
Onion
Powder
1 carton Cherry
tomato
es sliced
3/23 teaspoon
Salt
--
Shallot
Dressing --
3/4 teaspoon
Pepper
Instructions for Goose Creek Pear and Blue Cheese Salad with Shallot Dressing
Chill the plates.
Make the salad... you can toast the Pine Nuts and make the dressing the night before.
For the dressing, combine all the ingredients and blend until smooth. Chill until serving time.

Served this at a sparkling-wine tasting party we just hosted, and four people noted to me how much they enjoyed it. Honey-Shallot dressing paired nicely with the sweetness of the champagnes we tried. Be sure the pears are fully ripe.

You can subsititue the Apples for the Pears and Pecans for the Pine Nuts for another wonderful entertaining salad.

Suggested winter/fall variation: Add walnuts instead of pine nuts, and add dried cherries instead of tomatoes. Delicious!

Made dressing ahead 1 day and refrigerated -- brought it to room temperature before serving. Terrific combination of flavors; will definitely be making this again.
