Brian's Real Chili Ingredients

5 cups Beef - London Broil cubed1/2 teaspoon Black pepper crushed
1 1/2 cups Onion chopped2 teaspoons Salt
6 cloves Garlic chopped1 teaspoon Oregano
4 teaspoons Lard 3 each Bay leaf
1/2 cup Jalapeno peppers chopped4 tblspoons Corn Meal fine yellow
1/2 cup Serrano chiles chopped1 tblspoons Paprika
35 ounce Tomatoes diced -- Wet Ingrediants --
14 ounce Tomato sauce 1 tblspoons Molasses
12 ounce Beer 1 teaspoon Mole' Poblano
-- Dry Ingrediants --1 tblspoons Balsamic Vinegar
4 tablespoons Chili powder 1 teaspoon Beef Base
1 teaspoon Dry Mustard dry1 tblspoons Brown sugar
1 tablespoon Cilantro dry1 cup Hot Water to dissolve above
2 1/2 teaspoons Cumin dry

Instructions for Brian's Real Chili

In frying pan, brown meat . Remove the meat and drain. In same frying pan, melt lard and cook onions, peppers and garlic slightly.
Add meat, onions, peppers and garlic to slow cooker.
Add tomatoes and tomato sauce.
Add beer.
Mix dry ingrediants together prior, mix well and add.
Add water if needed cup at a time.
Let this cook for 2 hours at 250.
After 2 hours add wet ingrediants.
Stir well.
Add water as needed a little at a time.
Continue to cook for at least 2 more hours at 250.

To add more heat I add about teaspoon of some very fine crazy type of hot sauce when I add the wet ingrediants.
