Warm Cucumber Salsa Ingredients

1 1/2 tb Extra virgin olive oil 2 tb Poaching liquid; see recipe
4 sm Pickling cucumbers; peeled, 1/4 ts Salt
1/2 Glazed Spiced Pecans Freshly ground pepper
1/3 c Seasoned rice vinegar 1/2 c Minced cilantro

Put oil, cucumbers, seasoned rice vinegar, poaching liquid, salt and pepper in small skillet over medium-high heat. Cook until just warmed through, about 1 minute.
