Mediterranean Pasta Soup Ingredients
1/4 pound Mild Italian
Sausage
1 teaspoon Grated
Lemon
Peel
1 small
Onion
diced
2 small
Carrot
s peeled and diced
2 cloves
Garlic
minced or pressed
2 stalks
Celery
diced
1 1/2 teaspoon Dry
Thyme
Leaves
1 cup Dry Small Shell
Pasta
1/4 teaspoon
Pepper
1 medium
Tomato
cored and cut into 1/2 inch cubes
1/2 cup Dry Small White
Beans
(1/4 lb)
1 cup (3 oz)
Swiss Cheese
grated
3 quarts
Chicken Broth
Instructions for Mediterranean Pasta Soup
Remove casings from sausage and crumble into a 4-5 qt. pan. Cook over medium high heat, stirring often, until lightly browned, about 4 minutes.
Add onion, garlic, thyme and pepper; cook, stirring occasonally until onions are light gold, about 6 minutes.
Rinse and drain beans. Add beans broth, lemon peel to pan. Bring to boil over high heat. Cover, reduce heat, and simmer until beans are tender to bite, about 2 hours.
Add carrots, celery, and pasta to broth. Bring to boil over high hear; reduce heat, cover, and simmer until vegetables and pasta are tneder to bite, about 15 minutes.
Ladel into bowls, sprinkle cheese and tomatos on soup as desired.
Makes 3 quarts.
