Chicken Sandwiches Ingredients

16 slices bread	6 teaspoons mayonnaise
margarine or butter optional	6 lettuce leaves shredded
4 cups cooked diced chicken	salt & pepper to taste

Instructions for Chicken Sandwiches

Butter one side of each slice of bread then place cooked diced chicken on 8 slices of the bread, place the lettuce on top of the chicken and lightly season with the salt and pepper. Lightly spread the other 8 slices of buttered bread with mayonnaise and place on top of the filling, cut and serve or wrap in cling wrap for school lunches. Can be made on buns and rolls, or even put into pita pockets for variety with other vegetables such as grated carrot, firm tomato, onion, beetroot ect.
