Lamb-Vegetable Kabobs Ingredients

-- Marinade --1/2 teaspoon Ground cinnamon
1/4 cup Fresh coriander chopped1 pinch Ground cloves
1/4 cup Fresh mint chopped -- Kabobs --
1 Green chili seeded12 ounces Lamb lean, from leg, 1-in cubes
3 cloves Garlic 1 large Onion cubed
2 tablespoons Fresh ginger grated1 Red bell pepper cubed
1/2 cup Yogurt nonfat plain1 Yellow bell pepper cubed
1 teaspoon Ground cumin 1 Zucchini cubed
1 teaspoon Ground coriander 1 Yellow squash cubed

Instructions for Lamb-Vegetable Kabobs

In a food processor, grind together the fresh coriander, mint, chili pepper, garlic, and ginger. Place in a mixing bowl with the yogurt, cumin, ground coriander, cinnamon, and cloves.

Add the lamb and mix well. Allow to marinate for at least 2 to 3 hours in the refrigerator.

Chop the vegetables and add to the marinade mixture. Mix to coat well.

Heat the grill, allowing it to get very hot.

Thread the meat and vegetables onto skewers.

Grill on high heat for about 5 minutes on each side.
