Mutti's Meatloaf Ingredients

1 medium Onion Salt to taste
1 inch Fresh ginger peeled Cayenne pepper to taste
1 medium Egg Ground cumin to taste
2 small Tomatoes Paprika to taste
1 Chili pepper seeded Ground coriander to taste
Cilantro to taste - I use at least 1/2 a bunch Bread crumbs
1 1/2 pounds Ground beef lean sirloin

Instructions for Mutti's Meatloaf

Preheat oven to 350.

In a blender or food processor, chop onion, ginger, egg, tomatoes, chili pepper, and cilantro.

Add this liquid to ground sirloin and knead with your hands.

Add salt, cayenne pepper, cumin, paprika, and coriander. I use quite a bit of each, until I can really smell it, but that may overwhelm some. Knead the spices into the meat mixture.

Add lots of bread crumbs. The very moist meat mixture should become a pretty firm consistency.

Pat meat into a meatloaf pan and bake for 1 hour.

The only meatloaf my husband will eat without smothering it in ketsup. My mother-in-law who is an "avowed" cilantro hater absolutely loves this dish. It is the only kind of meatloaf she asks for now.
