Cheesy Chicken and Rice Bake

Ingredients

  • 1 can ( 10 3/4 oz Cream of Chicken Soup Regular or 98% fat free
  • 1 1/3 cups Water
  • 3/4 cups Rice Uncooked Regular long-grain white
  • 1/2 teaspoon Onion Powder
  • 1/4 teaspoon Ground Black Pepper
  • 1 1/2 pounds Skinless Boneless Chicken Breast Halves about 4 - 6
  • 1 cup Shredded Cheddar Cheese 4 oz

Preparation

Mix soup, water, rice, onion powder and black pepper in 2qt. shallow baking dish. Top with chicken. Sprinkle chicken with additional pepper.

Cover with aluminum foil and bake at 375 F for 45 min. or until chicken is no longer pink and rice is done.

Uncover, sprinkle cheese over chicken, the cheese melts from the heat of the chicken.

For a nice addition stir in 2 cups of fresh or canned, or frozen vegetables into soup mixture before topping with chicken.

easy meal for the kids, everything they love! I added frozen chopped onions as I didn't have onion powder and added cubed moneterey jack at the end with shredded cheddar. We'll make this again!

I am not a cook but mine turned out perfect and it was so easy to make! I did use a full cup of rice per some of the suggestions, I also used wild rice instead of white because that's all I had but it turned out so wonderful. A great weeknight meal. We had rosemary red potatoes and green beans and it all went together so nice. A+++

Due to the previous comments I added 1/4 cup more rice at the beginning. Come out with no liquid at all! Super easy! To jazz it up a bit I splashed some balsamic vinegar to the plated portion and Wal-lah! Yum-O

My sauce was thin also. I think it may be due to the extra water or broth that is added to many of the frozen chicken breasts.

Hi,

Made this last night, but let me ask a few questions,

1. Is it suppose to be thick or thin sauce? Mine was runny.

2. My rice did not cook and it was in for over 60 minutes.
