Calabacitas con queso tradicionales Ingredients

3 large Zuccini unpeeled, chopped in small wedges1 medium Finely chopped onion
salt and pepper to your taste1 cup Corn kernels
2 tb Vegetable oil 5 oz Evaporated milk
1 clove Garlic 1/2 lb Shredded cheese (Monterrey Jack or cheddar)

Instructions for Calabacitas con queso tradicionales

1. Heat a large saucepan and add the oil. Cook the onions and the garlic until onion is transluscent.
2. Add diced zucchini and cook until zuccini is lightley tender. Stir the corn kernels and season lightly with salt and pepper.
3. Add evaporated milk to the mixture and bring to a boil. Reduce heat to low, stir in diced or shredded cheese and cook until the cheese melts. Serve hot
