Mock Hollandaise Sauce Ingredients
1/4 cup
Egg
Substitute
1/2 teaspoon
Mustard
, dijon
1 tablespoon Smart Balance Spread
1 dash Pepper,
Cayenne
1 teaspoon Juice,
Lemon
Instructions for Mock Hollandaise Sauce
In a 1-cup microwaveable liquid measure, combine the egg substitute and the spread.
Microwave on low (20%) for 1 minute, stirring once halfway through cooking, until the spread is softened.
Stir the lemon juice and mustard into the egg substitute mixture.
Microwave on low for 3 minutes, stirring every 30 seconds, until thickened. Stir in the pepper.
If the mixture curdles, transfer to a blender and process on low speed for 30 seconds, until smooth.

Very good! We used it to make quick Eggs Benedict (and the "real" eggs and Canadian bacon probably canceled out the benefit of the egg substitute--but without it, we probably would have had too much guilt to make the dish at all!). It took a little longer to thicken and needed more power in our microwave. We used microwave egg poachers to make this a really quick and simple dish!
