Preheat oven to 250 degrees C. Thaw the puff pastry seperately on the bench on it's plastic. Don't wait til they are completely thawed or they will be hard to handle. Cut each into 4 equal squares. Spray a 12 muffin tray pan with cooking spray. Shape the pastry into the muffin tins. If you are in a hurry you can leave pointy bits of pastry sticking up at the tops or trim edges for a neater looking quiche. Combine beaten eggs, milk, cream or sour cream with salt and pepper. Add bacon, onion and cheese. Spoon evenly into the pastry and cook in the oven til eggs are set and pastry is cooked and puffed. This is really a great basic recipe - I have made these many times using differing quantities of eggs, cheese, milk and the cream or sour cream. If you don't have cream (or sour cream) just use more milk. I have also made these with sliced tomato on top or sliced black olives. You could add mushrooms or capsicum. I have also added broccoli and spinach too. Use with vegies as a main meal or a Sunday snack. Also great cold and taste better the next day
