Olive Garden's Pasta E Fagioli

I have made this recipe several times and it is very good and very close to what you get at the Olive Garden. I cooked it in the pressure cooker this time, but have also cooked it on top of the stove. It makes a LOT!

Ingredients

Preparation

Brown the ground beef in a large saucepan or pot over medium heat. Drain off most of the fat. Add onion, carrot, celery and garlic and saut for 10 minutes. Add remaining ingredients, except pasta, and simmer for 1 hour.

About 50 minutes into simmer time, cook the pasta in 1 1/2 to 2 quarts of boiling water over high heat. Cook for 10 minutes or just until pasta is al dente, or slightly tough. Drain.

Add the pasta to the large pot of soup. Simmer for 5 to 10 minutes and serve.

This recipe yields 8 servings.

Excellent, hearty soup. Next time I'll try browned Italian sausage instead of ground meat. My family (2 teens, hubby) loved it as is, but it was just a little bland to bite into a chunk of plain ground meat to me.

Delicious!! I used diced tomatoes "in garlic and olive oil," added an extra can of water, and let it simmer for 2 hours. Absolutely fantastic and really easy to make!

This tasted just like the soup at the restaurant. I would recommend this to anyone looking for a hearty soup like the restaurant. Just get a BIG container of the v8 - you will need at least 24 oz since it turns thick. And we added some red pepper flakes for alittle kick.

For the PP who said this isn't how OG makes it - of course not, they have a "meat sauce base" for the soup, that is where the V8 and vinegar flavors are.

OMG. Don't even bother trying it. The Pasta e Fagoli at Olive Garden's is the worst!! It tasted like chili. Look at the ingredients; V8 juice and vinger?? I was looking forward to real Pasta e Fagoli like my grandmother used to make. I was so disappointed.

This is a very easy to make recipe, tasty and warm.

I work at the OG and this is not the OGs way there is no v-8 juice in it or vinguar

Very very good and tastes like the Olive Garden offering. Used low sodium V8 instead, and even with double the amount of V8 there wasn't enough liquid. I would advise buying the large plastic V8 and also adding more of either tomato sauce, beef broth or water. Hearty and yummy!

This recipe was as good as Olive Garden's! Really a thick soup, more like a stew. Great taste and very filling! Excellent meal for a snowy night!

I've never tried the Olive Garden dish, but my adult son who has said that it tastes very much like the Olive Garden dish. My wife and I both liked the recipe. It will become one of our regular dinner side dishes.

Just like the real thing! I used about 2/3 of a pound of 93% lean ground beef to lower the fat. This is my son's FAVORITE soup of all time!
