For a meatless Passover menu, this slightly sweet baked pudding enriched with cottage cheese and studded with nuts and raisins can play the role of either main course or dessert. Lemon-Cheese Matzah Kugel with Raisins Ingredients

4 boards matzah 1 whole lemon zest 2 Tbsp (approx)
2 cups cottage cheese, small curd (16 oz)1/2 cup golden raisins
3 large eggs 1/2 cup pecans broken or coarsely chopped
1/2 teaspoon salt 6 tablespoons sweet butter
1/3 cup sugar sour cream for serving
1 tablespoon lemon juice

Instructions for Lemon-Cheese Matzah Kugel with Raisins

1. Preheat oven to 325 dF.

2. Soak whole matzot in cold water to cover until slightly softened but not mushy, about 1.5 minutes. Drain thoroughly.

3. Mix cottage cheese, eggs, salt, sugar, lemon juice, lemon rind, raisins, and walnuts.

4. Pour about 3 tablespoons melted butter into an 8-inch square baking dish or 2-quart cake pan. Set 1 whole matzah in pan, filling in any spaces with pieces from another matzah. Spread half the cheese mixture in pan. Cover with another layer of matzot. Spread remaining cheese mixture in pan. Top with a layer of matzot. Sprinkle remaining melted butter on top.

5. Bake for about 1 hour or until set and top is browned.

6. Serve hot or lukewarm. Cut in squares and serve with sour cream.
