Enchilada Casserole Ingredients
1 1/2 pound
Ham
burger
1 can (12 oz) Cream of
Chicken
Soup
2 can (12 oz) Enchilada Sauce
1 can (12 oz)
Cream of Mushroom
Soup
2 can (4 oz) Green Chilies chopped
1 ea White
Onion
chopped
12 ea
Corn
Tortillas
2 cup
Cheddar
& jack cheese shredded
Instructions for Enchilada Casserole
Brown hamburger and onion. Pour off fat. Cut tortillas into 1" squares and mix with all the other ingredients except cheese in a large bowl. Add drained hamburger. Mix and pour into a 9x13 glass casserole. Spread cheese evenly over mixture. Bake covered at 375 for 1 Hour. Serve with Sour cream and Salsa.

Easy to prepare and very tasty. We like spicy foods, so I used "hot" enchilada sauce and instead of 2 (4 oz) cans of green chiles, I used 1 (4-oz) can of diced green chiles and 1 (4-oz) can of diced jalapeno chiles.

I used 2 lbs of meat, so had to estimate and added a few more tortillas and some more enchilada sauce and I only had one can of green chiles, but it still turned out well. The whole family loved it, even the cat! We will be making this again soon.

Wow - this makes a huge casserole! It was a little bland for us, but I blame myself for that. Next time, I will use the medium enchilada sauce, as opposed to the mild, and top with some jalapeno slices.
