Black Bean and Chipotle Soup

Ingredients

  • 1/4 cup Olive oil
  • 4 cloves Garlic pressed
  • 2 cups Onion chopped
  • 2 1/2 cups Carrot peeled and diced
  • 1 1/2 teaspoon Cumin ground
  • 1 1/2 cups Celery chopped
  • 3 cups Black beans cooked (2 15 oz cans, undrained)
  • 1/2 teaspoon Dried chipotle powder
  • 2 cups Canned or Fresh Tomatoes
  • 1/2 cup Orange juice
  • 1/2 cup Water

Preparation

Warm the oil in a soup pan. Saute the onions and garlic in the oil for about 10 minutes, stirring frequently, until the onion are translucent.

Add the carrots and cumin and cook on medium heat, stirring often, for a few minutes.

Add the celery, lower the heat, cover, and cook for about 10 minutes.

Add the beans, chipotle, tomatoes, orange juice, and water and simmer covered for 20 minutes.

If you are not using canned beans add 1/4 cup of bean liquid or additional water.

If desired garnish each serving with a dollop of sour cream and jalapenos.
