Karoline's Cheesecake

A tasty no-bake cheesecake flavoured with raspberry jelly (Jello)

Ingredients


Preparation

1. In a plastic bag, crush the digestive biscuits with a rolling pin and gradually rub in the butter.

2. Press the crushed biscuit into an even layer in a deep pie dish, greased with butter. Set aside.

3. Dissolve the raspberry jelly in the boiling water and allow to cool.

4. In a bowl, combine the cream cheese and cream, mix until smooth. Add the jelly and mix well.

5. Pour the cheese, cream and jelly mix over the biscuit base. Place in the fridge and leave until set.

The jelly (Jell-O) used in the above recipe is Freia's Bringebr Gele, which comes in a 125 gram package and is meant to be mixed with 5 dl water. Digestive biscuits are British semi-sweet biscuits, also known as sweetmeal biscuits. A possible substitution is graham crackers.

Sometimes before the cheesecake is set, I swirl in some pureed raspberries. It looks great, and adds flavour.
