This summertime chicken salad is great for picnics or quick lunches. Whether on sandwiches or served with crackers it has a good, rich flavor and the grapes add a refreshing, juicy texture.

Curry Chicken Salad Ingredients
4 ea
Chicken breast
boneless, skinless
1/4 cup
Mayonnaise
1 cup
Pecan
broken into big pieces
2 tablespoon
Curry
powder
3 cup
Grapes
seedless, halved
1/4 cup
Sour cream
1/4 cup
Red onion
finely chopped
1/4 teaspoon
Salt
4 stalks
Celery
finely chopped
1/8 teaspoon Black
pepper
1/4 cup
Chicken broth
Instructions for Curry Chicken Salad
1) Boil Chicken in water with Celery tops (leaves)
2) Drain Chicken and let cool. Chop into small cubes.
3) Combine Chicken cubes, broken Pecans, halved Grapes, chopped Celery, and chopped Red Onion in a medium bowl.
4) Heat the Curry in a dry skillet over low-medium heat for 3 minutes (remove immediately if it begins to smoke).
5) Combine Mayonnaise, Sour Cream, Chicken Broth, Curry, Salt, and Pepper in a small dish.
6) Pour half of the Mayonnaise mixture over the Chicken mixture. Toss to coat.
7) Add additional Mayonnaise mixture over Chicken mixture to taste. Toss to coast.
8) Serve in warm Pita or with crackers (Triscuits recommended).

Was ok but needed something extra. I used walnuts and added chopped red apple- maybe it needed cucumber and red capsium in it with cherry tomatoes on the side. I served it on a bed of lettuce. Maybe I'll also use extra chicken next time. I only used 500g

This was great everyone liked it . next time 1/3 less curry

This was very good and served 6. I had it on a bed of leaf lettuce. I subsituted SueBee canned chicken to cut prep time.
